Chile Rellenos Casserole

Chile Rellenos Casserole with green chiles, Jack cheese, and cheddar

Chile Rellenos Casserole is one of those dinners I like when I want plenty of melted cheese and green chile flavor without frying or stuffing individual peppers. The layers are simple: tender whole green chiles, Jack cheese, cheddar, and a light egg-and-milk mixture that bakes around everything and holds it together.

Chile Rellenos Casserole with green chiles and melted Jack and cheddar cheese

The result is soft and cheesy in the middle with a lightly golden top. It is much easier than traditional chile rellenos, but it still gives you that combination of mild green chiles and rich cheese that makes the dish so comforting.

Why You’ll Love This Chile Rellenos Casserole

  • No frying: Everything is layered in one baking dish, so there is much less hands-on work.
  • Very cheesy: Jack cheese gives the casserole a smooth melt, while cheddar adds a little more flavor.
  • Simple ingredients: Canned whole green chiles make this easy to put together any time of year.
  • Easy to portion: Once the casserole rests, it cuts neatly into six pieces.
  • Works for dinner or brunch: The egg mixture gives it enough structure to work well for either meal.

Ingredient Notes

Whole green chiles: Canned whole chiles are the easiest choice here because they are already tender and can be opened flat for layering. Drain them well before they go into the baking dish.

Jack cheese: This is the main melting cheese in the casserole. Monterey Jack works especially well because it melts smoothly without overpowering the chiles.

Cheddar: I like the extra flavor cheddar brings alongside the milder Jack cheese. A medium or sharp cheddar both work.

Eggs, flour, and milk: These form the light batter that settles between the chile and cheese layers. It is what helps the casserole set instead of turning into a loose pan of melted cheese.

How This Casserole Comes Together

The first thing that matters is getting as much liquid as possible off the canned chiles. Once they are drained, open them flat and use half to cover the bottom of the baking dish. A layer of Jack and cheddar goes over the chiles, then the remaining chiles and cheese are added on top.

The egg mixture is whisked separately until smooth and poured over the layered chiles and cheese. It works its way into the gaps as the casserole bakes. When the center is set and the top is lightly golden, the casserole is ready to come out of the oven.

Do not rush the resting time. A few minutes on the counter makes a noticeable difference when you slice it because the filling has time to firm up.

Tips for the Best Texture

  • Drain the chiles well. Extra liquid is the fastest way to end up with a watery casserole.
  • Whisk the batter until smooth. Break up any flour lumps before pouring it over the cheese.
  • Keep the layers even. Spread the chiles and cheese across the whole dish so every serving gets a similar amount.
  • Watch the center, not just the edges. The casserole is done when the middle looks set instead of loose.
  • Let it rest before cutting. Five to ten minutes is enough for cleaner slices.

What to Serve with Chile Rellenos Casserole

I would keep the sides fairly simple because the casserole is already rich and cheesy. A crisp salad, sliced avocado, salsa, or seasoned rice all work well. If you are serving it for brunch, fresh fruit and breakfast potatoes are easy additions.

Storage and Reheating

Store leftover casserole covered in the refrigerator for up to 3 days. Reheat individual portions in the microwave, or warm a larger portion in a covered baking dish at 325°F until heated through.

If the casserole looks a little damp after refrigeration, uncover it for the last few minutes of reheating. That helps the top dry out without overcooking the center.

Chile Rellenos Casserole FAQs

Is this casserole spicy?

Canned whole green chiles are usually mild, so this casserole has chile flavor without a lot of heat. The exact level can vary a little by brand.

Can I make it ahead?

You can assemble the casserole a few hours ahead and keep it covered in the refrigerator. Let the dish sit at room temperature while the oven preheats, then bake until the center is fully set.

Why did my casserole turn watery?

The most common cause is excess liquid from the canned chiles. Drain them thoroughly before layering. The casserole also needs enough time in the oven for the center to set.

  • 3/4 lb Jack cheese grated
  • 1 cup cheddar cheese grated
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1 1/2 cups milk

  • 1/2 tsp black pepper
