3-Ingredient Banana Bread
This easy 3-Ingredient Banana Bread uses ripe bananas, eggs, and yellow cake mix for a soft, sweet quick bread with almost no measuring. The recipe makes two small loaves and is easy to freeze.

- 2 large eggs
- 1 15.25-ounce box yellow cake mix

Preheat the oven to 350°F. Grease two small loaf pans and set them aside.
Place the ripe bananas in a large mixing bowl and mash until mostly smooth.
Add the eggs and stir until combined. Add the yellow cake mix and mix just until no dry pockets remain. Fold in chopped nuts if using.
Divide the batter evenly between the two prepared loaf pans and smooth the tops lightly.
Bake for 35 to 40 minutes, or until a toothpick inserted near the center comes out clean or with a few moist crumbs.
Let the loaves cool in the pans for about 10 minutes, then turn them out onto a wire rack and cool before slicing.
