4-Ingredient Slow Cooker Chicken and Stuffing

This ultra-easy 4-ingredient slow cooker chicken with stuffing is a rich, hearty, and comforting meal. Tender, juicy chicken thighs are topped with a creamy, fluffy stuffing mixture. With just 10 minutes of prep, your crockpot does all the heavy lifting for a perfect weeknight dinner!

Ingredients
  

  • 6 boneless chicken thighs
  • 2 cups chicken broth
  • 1 box of stuffing
  • 1 can cream of chicken soup

Instructions
 

  • Prep the slow cooker: Lightly coat the inside of your slow cooker with non-stick spray. Place the boneless chicken thighs in an even layer at the bottom.
  • Mix the liquids: In a bowl, combine the chicken broth, cream of chicken soup, and half of the dry stuffing mix. Stir until blended.
  • Pour and layer: Pour the soup and broth mixture evenly over the chicken thighs. Sprinkle the remaining dry stuffing mix evenly over the top.
  • Cook: Secure the lid. Cook on LOW for 8 hours or on HIGH for 7 hours.
  • Serve: Serve warm straight from the slow cooker, paired with your favorite vegetables or a side salad.

Notes

  • Storage: Store leftovers in airtight containers in the fridge for up to 5 days.
  • Freezing: Freeze in a freezer-safe bag or container for up to 5 months.
  • Reheating: Microwave individual portions for 2-3 minutes, or reheat gently in a saucepan on the stove, adding a splash of broth if needed to restore moisture.
