Total Time 25 minutes mins
- 4 cups biscuit baking mix plus a little extra for dusting
- 1 cup sour cream
- 1 cup 7-Up or other lemon-lime soda
- 1/2 cup butter melted
Preheat the oven to 425°F. Pour the melted butter into the bottom of a 9×13-inch baking dish.
Stir the baking mix, sour cream, and lemon-lime soda together in a large bowl until a very soft dough forms.
Lightly dust a clean work surface with extra baking mix. Turn out the dough and gently fold it just enough to make it manageable, then pat it to about 1 inch thick.
Cut the dough with a round biscuit cutter, pressing straight down rather than twisting. Arrange the biscuits in the baking dish directly over the melted butter.
Bake for 12 to 15 minutes, or until the tops are lightly golden and the biscuits are cooked through.
Let the biscuits cool for a few minutes in the pan before serving warm.
- The dough is supposed to be very soft and sticky, so use only enough extra baking mix to make it manageable.
- Handle the dough gently to keep the biscuits tender.
- Press the biscuit cutter straight down instead of twisting for cleaner edges and a better rise.
