Ingredients

  • 1 pound bacon cut into thirds
  • 1 pound Lil' Smokies or other small cocktail sausages
  • 1 stick butter
  • 2 cups brown sugar divided

Instructions

  • Heat the oven. Preheat your oven to 375°F.
  • Wrap the sausages. Cut each strip of bacon into three shorter pieces. Wrap one piece of bacon snugly around each little smokie.
  • Arrange in the baking dish. Place the bacon-wrapped smokies in a baking dish in a single layer. Position the bacon seams underneath whenever possible so the pieces stay wrapped as they bake.
  • Prepare the buttery brown sugar mixture. Melt the butter in a small saucepan or microwave-safe bowl. Stir in 1 cup of the brown sugar until the mixture is well combined.
  • Coat the smokies. Slowly pour the melted butter and brown sugar mixture over the bacon-wrapped sausages, distributing it as evenly as possible.
  • Add the remaining sugar. Sprinkle the remaining 1 cup brown sugar evenly across the top of the smokies.
  • Bake. Place the baking dish in the preheated oven and bake for about 15 to 20 minutes.
  • Crisp the bacon. Increase the oven temperature to 400°F and continue baking for approximately 5 minutes, or a little longer if necessary, until the bacon is browned and crisp around the edges and the brown sugar mixture is bubbling and caramelized.
  • Serve warm. Carefully remove the baking dish from the oven. Let the smokies rest for a few minutes before transferring them to a serving platter and enjoying them warm.

Notes

Regular-cut bacon works especially well because it has enough time to crisp while the smokies heat through.
Watch the dish closely once you increase the oven temperature. The sugary glaze can caramelize quickly.
If you'd like an easier grab-and-go appetizer for parties, secure each bacon-wrapped smokie with a toothpick before baking.
The sauce will be extremely hot immediately after baking, so give the smokies a few minutes to cool before serving.
