Tender pieces of chicken are combined with mozzarella, fresh herbs, almond flour, and eggs before being pan-fried until beautifully golden. These easy Cheesy Chicken Fritters are crisp around the edges, juicy inside, and perfect for a quick family dinner.
Prepare the chicken. Using a sharp knife, slice the chicken breasts into very thin pieces, then chop them into small bite-size pieces so they will cook evenly.
Make the fritter mixture. Add the chopped chicken to a large mixing bowl along with the eggs, almond flour, mozzarella, basil, parsley, chives, garlic powder, salt, and black pepper.
Combine thoroughly. Mix everything together until the chicken is evenly coated and the ingredients are well distributed throughout the mixture.
Heat the skillet. Warm the olive oil in a large skillet over medium heat.
Form the fritters. Spoon portions of the chicken mixture into the hot skillet, leaving enough space between each fritter. Gently press each portion down with the back of a spatula to create an even thickness.
Cook until golden. Fry the fritters until the bottoms are golden brown and firm enough to flip, then carefully turn them over.
Finish cooking. Continue cooking the second side until golden brown and the chicken is completely cooked through. The center of the fritters should reach 165°F (74°C).
Serve. Transfer the cooked fritters to a plate and serve warm with your favorite dipping sauce or side dishes.
