Cinnamon Apple Cake

A moist homemade cinnamon apple cake made with fresh apple, brown sugar, cinnamon, and walnuts. This easy fall cake is simple to mix and perfect with coffee or as a family dessert.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 large apple peeled and chopped
  • 1 cup vegetable oil
  • 1 cup dark brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup walnuts chopped
  • 2 large eggs
  • 1 tablespoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions
 

  • Preheat the oven to 350°F. Lightly grease a 9-inch round cake pan.
  • In a medium bowl, whisk the eggs and vegetable oil until combined. Add the cinnamon, granulated sugar, dark brown sugar, and vanilla extract and mix until evenly blended.
  • Add the flour, salt, baking soda, and baking powder. Mix just until no obvious streaks of dry flour remain.
  • Fold in the chopped apple and walnuts until evenly distributed. Transfer the batter to the prepared pan and smooth the top gently.
  • Bake for about 45 minutes, or until a toothpick inserted near the center comes out clean or with a few moist crumbs. Let cool in the pan for about 15 minutes before slicing.

Notes

Chop the apple into small, even pieces and avoid overmixing after adding the flour. Start checking the cake a few minutes before the end of the baking time because ovens can vary.
