  • Start checking the pasta around 10 minutes, using the package time as a guide. Cook until al dente, or tender with a little firmness in the center. If the soup becomes too thick, add a small splash of broth or water.

Notes

Makes about 6 to 8 servings, depending on portion size. Times are estimates; use tender carrots and al dente pasta as the final guide. Use 15- to 15.5-ounce cans of beans, a 14.5- to 15-ounce can of diced tomatoes and two 8-ounce cans of tomato sauce. Start with 3 cups of broth and add only a small splash if the soup needs loosening. For separate pasta, cook the measured 1 cup of dry ditalini according to the package, drain, divide among bowls and ladle the finished soup over it.
