Ingredients

  • 1 pound ground beef
  • 1 small onion diced
  • Salt and pepper to taste
  • 2 tablespoons taco seasoning
  • 1 teaspoon garlic powder
  • 1 cup long grain white rice
  • 1 1/2 cups beef broth
  • 1 can corn 15 ounces, drained
  • 8 ounces tomato sauce
  • 1/2 cup salsa
  • 1 cup shredded cheese

Instructions

  • Cook the ground beef and diced onion together in a large skillet over medium-high heat. Season with salt and pepper to taste and cook until the beef is no longer pink. Drain grease if necessary.
  • Return the pan to the stove and sprinkle the beef mixture with garlic powder and taco seasoning. Stir well to coat the beef evenly.
  • Stir in the long grain white rice, beef broth, drained corn, tomato sauce, and salsa.
  • Bring the mixture to a boil. Cover the skillet, reduce the heat, and simmer for 18 to 20 minutes, or until the rice is tender.
  • Sprinkle the shredded cheese over the top. Cover the skillet again for 2 to 3 minutes, or until the cheese is melted.
  • Serve warm and enjoy.

Notes

For the best texture, keep the skillet covered while the rice simmers and avoid stirring too often. This helps the rice cook evenly and absorb the sauce without becoming mushy.
