Ingredients

  • 2 8-ounce tubes refrigerated crescent roll dough
  • 8 ounces brie cheese well chilled
  • 1/2 cup fruit jam or preserves such as raspberry, apricot or strawberry

Instructions

  • Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  • Place the brie in the freezer for about 10 minutes to firm it slightly before cutting.
  • Unroll the crescent dough. Gently press the perforated seams together to create two sheets of dough.
  • Cut the dough into 24 pieces.
  • Cut the chilled brie into 24 small pieces. There's no need to remove the rind unless you prefer to.
  • Place one piece of brie in the center of each piece of dough.
  • Spoon about 1 teaspoon of preserves over each piece of cheese.
  • Pull the dough up around the filling and gently pinch the edges together.
  • Arrange the bites in the prepared baking dish.
  • Bake for 15 to 20 minutes, or until the crescent dough is puffed, cooked through and golden brown.
  • Let the bites sit for 5 to 10 minutes before serving. The filling will be very hot straight from the oven.

Notes

Keep the brie cold until you're ready to cut it. A short trip to the freezer makes it much easier to portion.
Don't overfill the bites with preserves. Too much can leak out as they bake.
Raspberry, apricot, strawberry, fig and cranberry preserves all pair well with brie.
A little cheese or jam leaking from the dough is completely normal.
Serve the bites warm for the best texture.
