Texas Roadhouse Steak Seasoning

A homemade copycat-style steak seasoning with kosher salt, brown sugar, black pepper, garlic, onion, paprika, chili powder, and small amounts of turmeric and cornstarch. Mix one small batch in about 5 minutes.

Ingredients
  

  • 2 teaspoons coarse kosher salt
  • 2 teaspoons brown sugar
  • 1/4 teaspoon cornstarch
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1 teaspoon black pepper

Instructions
 

  • Measure the kosher salt, brown sugar, cornstarch, garlic powder, onion powder, turmeric, paprika, chili powder, and black pepper into a small, dry bowl.

  • Use the back of a spoon to break up any brown sugar clumps. Stir or whisk until the color is even and the salt and black pepper are distributed throughout, scraping the sides and bottom of the bowl.

  • Transfer to a small, clean, dry jar if desired. Stir or shake before measuring out a portion so the coarser grains and fine spices stay evenly mixed.

  • To use, pat the steak dry. Start with about ¾ to 1 teaspoon of seasoning in total for an 8- to 12-ounce steak, divided over both sides and the edges. Press it on gently. Skip extra salt when using the complete blend, and cook according to your preferred steak method. Watch the heat because the brown sugar can scorch. Steak cooking time is separate from the 5-minute seasoning prep.

Notes

This is a homemade copycat-style blend. Use coarse kosher salt, ground black pepper, and a chili powder spice blend rather than pure ground hot chili. Salt crystal size varies, so start with a light coating on the steak. Brown sugar can scorch over very high heat. The 5-minute timing covers mixing the seasoning; steak cooking time is separate.
