Walking Taco Casserole

This Walking Taco Casserole is a fun, cheesy, family-friendly dinner made with seasoned beef, Ro-Tel tomatoes, cheddar cheese, and crunchy Fritos. Finish it with fresh taco toppings for the perfect mix of hot, melty, cool, and crunchy.

Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 10.5 oz can Ro-Tel diced tomatoes and green chilies
  • 2 cups shredded cheddar cheese
  • 1 9.25 oz bag Fritos
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup diced onions
  • Sour cream for topping
  • Salsa for topping
  • Jalapeños for topping

Instructions
 

  • Brown the beef: In a large skillet over medium heat, cook the ground beef until no longer pink. Drain any excess fat.
  • Add flavor: Stir in the taco seasoning and Ro-Tel diced tomatoes with green chilies. Mix well and let the beef mixture simmer for about 5 minutes.
  • Layer the casserole: Spread half of the Fritos in the bottom of a casserole dish. Add half of the beef mixture over the chips, then sprinkle with half of the shredded cheddar cheese.
  • Repeat the layers: Add the remaining Fritos, the remaining beef mixture, and the remaining cheddar cheese on top.
  • Bake: Place the casserole in a preheated oven at 350°F (175°C) and bake for 15 to 20 minutes, or until the cheese is melted, bubbly, and lightly golden.
  • Add toppings: Remove from the oven and top with shredded lettuce, diced tomatoes, diced onions, sour cream, salsa, and jalapeños as desired.
  • Serve: Serve warm while the cheese is melty and the Fritos still have crunch.

Notes

For the best texture, add the fresh toppings only after baking and serve right away. Add extra fresh Fritos on top before serving if you want even more crunch.
