It’s creamy, cheesy, packed with tender chicken and egg noodles, and finished with crispy French-fried onions for that little bit of crunch that makes every bite better. The corn adds a touch of sweetness, while onion and garlic give the creamy sauce plenty of flavor.
This is also one of my favorite recipes for using leftover chicken. If I have rotisserie chicken in the fridge, this casserole becomes even easier. Everything gets stirred together in one bowl, transferred to a baking dish, and baked until hot and bubbly.
It’s simple comfort food, and sometimes that’s exactly what dinner needs to be. When I want something a little lighter with rice and vegetables, I make this Teriyaki Chicken Casserole.

Ingredients You’ll Need
Cooked Egg Noodles
You’ll need 2 cups cooked egg noodles. I like egg noodles because their soft texture works especially well with creamy casseroles.
Try not to overcook them before they go into the casserole. Slightly firm noodles hold up better while baking.
Cooked Chicken
Use 2 cups cooked and shredded chicken.
Leftover roasted chicken, baked chicken breasts, or rotisserie chicken all work well here. I usually shred the chicken rather than chopping it because the smaller pieces mix more evenly throughout the noodles.
Corn
You can use fresh, frozen, or canned corn.
If using canned corn, drain it well. If using frozen corn, I normally thaw it first so it doesn’t add extra moisture to the casserole.
Cream of Chicken Soup
Two cans of cream of chicken soup form the base of the creamy sauce.
Mixed with milk, it creates a thick, comforting filling without requiring a separate homemade sauce.
Milk
A cup of milk loosens the condensed soup enough to coat the chicken and noodles evenly.
Whole milk will give you the richest result, but 2% works well too.
Onion and Garlic
Diced onion and minced garlic make a noticeable difference here. They cut through the creamy sauce and keep the casserole from tasting flat.
If you prefer a softer onion texture, you can sauté the onion for a few minutes before mixing it into the casserole.
Shredded Cheese
I usually reach for cheddar because I love its flavor with chicken and corn.
You can also use Colby Jack, Monterey Jack, mozzarella, or a blend of cheeses.
And yes, if you want an extra-cheesy casserole, adding a little more is completely reasonable.
French-Fried Onions
The crispy onion topping is one of my favorite parts.
Instead of mixing all of them into the casserole, I prefer sprinkling them over the top near the end of baking. That way they stay golden and crunchy.

How to Make Ultimate Chicken Casserole
This recipe comes together quickly, especially when the chicken and noodles are already cooked.
1. Prepare the Baking Dish
Preheat your oven to 350°F.
Lightly coat a 9×13-inch baking dish with nonstick cooking spray.
2. Combine the Filling
In a large mixing bowl, combine the cooked egg noodles, shredded chicken, corn, cream of chicken soup, milk, diced onion, minced garlic, and shredded cheese.
Season with salt and freshly ground black pepper to taste.
Stir everything together until the chicken and noodles are evenly coated in the creamy sauce.
3. Transfer to the Pan
Spoon the mixture into the prepared baking dish and spread it out evenly.
4. Bake
Place the casserole in the preheated oven and bake for about 25 minutes.
Carefully remove the dish from the oven and sprinkle the French-fried onions evenly over the top.
Return it to the oven for another 5 to 10 minutes, or until the casserole is hot and bubbling around the edges and the onions are crisp and golden.
5. Serve
Let the casserole rest for about 5 minutes before serving.
Spoon it onto plates while it’s still warm and creamy.

Tips for the Best Chicken Casserole
Don’t overcook your noodles before baking. Remember, they’ll continue cooking slightly in the oven.
Drain canned or thawed corn well so the casserole doesn’t become watery.
I also recommend tasting the mixture before adding extra salt. Cream of chicken soup and French-fried onions already contain salt, so you may need less seasoning than expected.
For an extra cheesy top, sprinkle another handful of shredded cheese over the casserole before adding the crispy onions.

Easy Variations
One of the reasons I keep recipes like this around is how easily they can be changed.
You can replace the corn with peas, broccoli, green beans, or a frozen vegetable blend.
For more cheese flavor, increase the cheddar to 1 cup.
You can also add sautéed mushrooms or diced bell peppers.
If you like a little heat, a pinch of cayenne pepper or a few shakes of hot sauce stirred into the filling works nicely.
Can I Use Rotisserie Chicken?
Absolutely.
Rotisserie chicken is probably the fastest option for this recipe. Simply remove the skin and bones, shred the meat, and measure out about 2 cups.
Both white and dark meat work well.
Can I Make Chicken Casserole Ahead of Time?
Yes.
You can assemble the casserole several hours ahead, cover it tightly, and keep it refrigerated until you’re ready to bake.
I recommend leaving the French-fried onions off until the casserole is almost finished baking so they don’t become soggy.
If you bake the casserole directly from the refrigerator, it may need an extra 5 to 10 minutes in the oven.
How to Store Leftovers
Transfer leftover chicken casserole to an airtight container and refrigerate it.
For the best texture, enjoy it within 3 to 4 days.
Individual portions can be reheated in the microwave. For larger portions, cover the baking dish with foil and warm it in a 350°F oven until heated through.
The crispy onions will soften during storage, so you can always sprinkle a few fresh ones over the reheated casserole.

What to Serve With Ultimate Chicken Casserole
This casserole already includes chicken, noodles, corn, and a creamy sauce, so I usually keep the side dishes simple.
A fresh green salad, steamed broccoli, roasted green beans, or glazed carrots all pair nicely with it.
Warm dinner rolls are also great if you want a classic comfort-food dinner.
