- 1/2 cup parsley, chopped
- 1/2 tablespoon ground sage
- 1 1/2 teaspoons dried thyme leaves
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 6 cups low-carb bread, toasted and chopped
- 6 cups cornbread stuffing
- 1 large egg, slightly beaten
- 1 can chicken broth
How to Make Stuffing Balls
- Preheat the oven to 375°F and coat a baking pan with nonstick spray.
- Melt the butter in a large skillet over medium heat. Add the onion and cook for about 10 minutes.
- Add the celery, parsley, sage, thyme, salt, and pepper. Cook for another 5 minutes, stirring often, then remove from the heat.
- Combine the toasted bread and cornbread stuffing in a large bowl.
- Add the beaten egg and 3/4 cup chicken broth. Stir to combine.
- Mix in the sautéed onion, celery, and herbs.
