If you want a loaded nachos recipe that works for game day, movie night, parties, or an easy family dinner, these Epic Beef Nachos Supreme deliver everything we want from a great tray of nachos.

Crispy tortilla chips are covered with seasoned ground beef, creamy refried beans, and plenty of melted cheese, then finished with fresh tomatoes and green onions. I especially like making these when I need something casual that can feed several people without complicated preparation.

Because we build these nachos on two baking sheets, the toppings spread more evenly instead of creating one overloaded pile with dry chips underneath. That small detail gives us better cheese coverage and more fully loaded bites.

Why You’ll This Recipe

The best nachos have contrast, and this recipe has plenty of it. We get crunchy chips, juicy taco-seasoned beef, creamy beans, gooey melted cheese, and cool fresh vegetables in the same bite.

I also love that these are oven-baked nachos rather than microwave nachos. Baking distributes the heat much more evenly and lets the cheese melt across a large portion of the chips at once.

Using two trays is another important advantage. If we stack tortilla chips too deeply, the bottom chips rarely receive enough beef, beans, or cheese.

A shallower layer creates more surface area for toppings. It also reduces the chance of ending up with a mountain of soggy chips in the center.

The seasoned beef gives the nachos most of their savory flavor. Cooking the onion with the beef also softens its sharpness while adding subtle sweetness to the meat mixture.

Refried beans are useful for more than flavor. Their thick, creamy texture helps make the nachos satisfying without adding another loose or watery topping that could quickly soften the chips.

Then comes the cheese. A generous layer melts around the beef and beans, helping hold the toppings onto the tortilla chips while adding the rich flavor that makes beef nachos supreme so addictive.

I always add the tomatoes and green onions after baking. Keeping fresh toppings away from the oven preserves their color, texture, and bright flavor.

Ingredients You’ll Need

Ground Beef

Ground beef is the heart of these loaded nachos. I prefer using beef that has enough fat for flavor but is not so fatty that it leaves the tortilla chips greasy.

Draining excess fat before adding the taco seasoning is important. Too much rendered fat can soak into the chips and make them lose their crunch faster.

Tortilla Chips

Choose sturdy tortilla chips rather than extremely thin restaurant-style chips. We need chips strong enough to support beef, beans, and melted cheese without snapping immediately.

Try to use mostly whole chips when assembling the trays. Save the tiny broken pieces from the bottom of the bag for another use.

Refried Beans

Refried beans add a creamy, hearty layer and help turn these from a snack into something substantial enough for an easy dinner.

If your beans are especially thick, stirring them until smooth before assembling makes them easier to distribute without breaking the chips.

Shredded Cheese

Cheese is responsible for that classic stretchy, melty nacho finish. Cheddar, Monterey Jack, Colby Jack, or a Mexican-style cheese blend can all work beautifully.

For the smoothest melting, I usually prefer freshly shredded cheese. Pre-shredded cheese often contains anti-caking ingredients that can make the melted texture slightly less creamy.

Variations And Substitutions

You can easily customize these homemade loaded nachos depending on what you already have in your refrigerator.

Ground turkey or ground chicken can replace the beef for a lighter variation. Season the meat generously because lean poultry has a milder flavor than beef.

For a meatless version, skip the ground beef and increase the beans. Black beans, pinto beans, or seasoned lentils are good additions for more texture and protein.

You can also add sliced jalapeños if your family likes spicy nachos. Pickled jalapeños bring both heat and acidity, while fresh jalapeños have a brighter, sharper flavor.

Other excellent toppings include sliced black olives, avocado, guacamole, sour cream, salsa, cilantro, corn, or finely diced red onion.

I recommend adding watery or creamy toppings after the nachos come out of the oven. This keeps the tortilla chips crisp for much longer.

If you want extra heat in the beef, add crushed red pepper, cayenne, hot taco seasoning, or your favorite hot sauce.

Storage and Reheating

Nachos are always best eaten immediately because tortilla chips naturally absorb moisture from the toppings.

If you have leftovers, transfer them to an airtight container and refrigerate them for up to 2 days. Keep any extra fresh tomatoes, salsa, sour cream, or guacamole in separate containers whenever possible.

I don’t recommend freezing assembled nachos. Tortilla chips lose their crisp texture after freezing and thawing, and fresh vegetables can release additional water.

However, you can freeze the cooked taco meat separately. Once cooled, store it in an airtight freezer-safe container and freeze it for up to about 3 months.

For reheating, the oven or air fryer gives much better results than the microwave. Gentle dry heat helps crisp the tortilla chips again while remelting the cheese.

Spread leftover nachos in a single layer whenever possible and heat only until the cheese is hot. Overheating can make the chips too dark around the edges.

Frequently Asked Questions (FAQ)

How do I keep nachos from getting soggy?

Avoid piling the chips too deeply and drain excess grease from the cooked beef. I also recommend keeping salsa, sour cream, and other wet toppings off the nachos until serving.

Adding the tomatoes after baking also helps because they don’t have time to release their juices into the chips while they cook.

What is the best cheese for nachos?

Cheddar gives us plenty of bold flavor, while Monterey Jack melts exceptionally well. A combination of the two is one of my favorite choices.

Mexican-style shredded cheese blends also work well when you want an easy option containing several complementary cheeses.

Can I prepare beef nachos ahead of time?

You can prepare the beef mixture ahead and refrigerate it until you’re ready to assemble the nachos. I would not assemble the entire tray several hours ahead because the beans and meat can soften the tortilla chips.

For parties, I like having the toppings prepared separately and building the nachos shortly before they go into the oven.

Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes

Ingredients

  • 2 large bags tortilla chips
  • 1 lb ground beef
  • 1 packet taco seasoning
  • ½ onion diced
  • 1 can refried beans
  • 16 oz shredded cheese
  • 3 Roma tomatoes diced
  • 2 –3 green onions chopped

Instructions

  • Preheat the oven to 400°F.
  • Place the ground beef and diced onion in a large skillet over medium-high heat. Cook until the beef is completely browned and the onion is tender, breaking the meat into small pieces as it cooks.
  • Carefully drain away any excess grease from the skillet.
  • Reduce the heat to low and stir the taco seasoning into the beef mixture. Continue cooking for another 2–3 minutes so the seasoning can thoroughly coat the meat.
  • Divide the tortilla chips evenly between two large baking sheets. Spoon half of the refried beans over each tray, distributing them across the chips as evenly as possible.
  • Divide the seasoned beef mixture between the two trays. Sprinkle the shredded cheese evenly over the beef, beans, and tortilla chips.
  • Bake for 10–15 minutes, or until the cheese is completely melted and the nachos are heated through.
  • Remove the trays from the oven and immediately scatter the diced Roma tomatoes and chopped green onions over the top.
  • Serve the nachos while hot and crispy with your favorite optional toppings.

Notes

Keep the tortilla chips in a relatively shallow layer instead of piling them high. More exposed surface area means better beef, bean, and cheese coverage, giving you more fully loaded chips and fewer soggy spots.
