Creamy Chicken Rice Casserole

Ingredients:

  • 2 cups cooked chicken (shredded or cubed)
  • 1 cup uncooked long-grain white rice
  • 2 1/4 cups chicken broth (or water with bouillon)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream (optional, for extra creaminess)
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1/2 cup milk
  • 1 cup frozen peas and carrots (or mixed veggies)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt & pepper to taste
  • Optional topping: crushed Ritz crackers, breadcrumbs, or French fried onions

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
