Ingredients

  • 1 lb red potatoes (3-4 medium), cut into 1” pieces
  • 3 tbsp water
  • 2 tbsp brown sugar
  • 2 tbsp cider vinegar
  • 1 tbsp Dijon mustard
  • 1-1/2 tsp minced fresh thyme or 1/2 tsp dried thyme
  • 1/4 tsp pepper
  • 1 tbsp olive oil
  • 1/2 c. chopped onion
  • 3/4 lb smoked kielbasa or Polish sausage, cut into 1/4” slices
  • 4 c. fresh baby spinach
  • 5 bacon strips, cooked and crumbled

How To Make Potato Kielbasa Skillet

Step 1: In a microwave-safe dish, place the potatoes and water. Cover and microwave for about 3 to 4 minutes on high until the potatoes are tender. Drain when done.

Step 2: In the meantime, whisk the brown sugar, vinegar, mustard, thyme, and pepper. Heat oil in a large skillet over medium-high heat. Once the oil is hot, add the onion and kielbasa to the skillet and saute until the onion is tender.

Step 3: To the skillet, add the potatoes and continue to cook for another 3 to 5 minutes, stirring until lightly browned. Pour in the brown sugar mixture, stir, and bring the mixture to a boil. Decrease the heat and simmer for about 2 minutes, uncovered while stirring the mixture occasionally. Add in the spinach and stir until wiled before combining in the bacon.

Tips:

Kielbasa when you buy it is already pre-cooked. They have been smoked so all you need to do is heat them back up or brown.

If the temperature of the kielbasa reached 168 degrees F and 174 degrees F, the kielbasa is perfectly cooked.
Sauerkraut dishes is perfect with kielbasa. You can substitute kielbasa for the Italian sausage links in this sauerkraut casserole or if desired you can serve kielbasa with sauerkraut latkes. You can also try kielbasa chilli, kielbasa tortellini Alfredo, kielbasa hot potato slaw, and even a hot kielbasa dip.

Polish sausage and kielbasa do not have much of a difference. Aside from kielbasa being more garlicky and is lightly smoked. And If you don’t know, “Kielbasa” is the Polish word for “sausage”.
