Instant Pot Cabbage Sausage and Potato Soup

INSTANT POT CABBAGE, SAUSAGE AND POTATO SOUP

Instant Pot Cabbage Sausage and Potato Soup is a buttery pressure-cooker meal with tender cabbage, smoked sausage, potatoes, onion, garlic, and a little optional cayenne. It cooks under pressure for just 8 minutes, making it one of the fastest cabbage dinners on the site.

Why This Instant Pot Soup Works

Cabbage gives off liquid as it pressure cooks, so the recipe needs only a small amount of water or broth to get started. The smoked sausage seasons the vegetables as they cook, while butter makes the broth richer.

This is different from the stovetop smoked-sausage cabbage soup because it has no cream, carrots, or corn and relies on pressure cooking instead of simmering.

Ingredient Notes

  • Cabbage: Roughly chop one medium head so the pieces fit comfortably in the pressure cooker.
  • Smoked sausage: Cut it into roughly 1-inch pieces.
  • Potatoes: Cut them into larger 1 1/2-inch cubes so they hold together during pressure cooking.
  • Butter: Divide the stick into two 4-tablespoon portions.
  • Cayenne: It is optional and adds just a little heat.

Pressure Cooker Tips

Make sure the sealing ring and vent are positioned correctly before cooking. Once the 8-minute pressure-cook cycle finishes, carefully use a quick release according to your pressure cooker’s safety instructions.

The cabbage produces extra liquid as it cooks. If you want the finished dish more soup-like, stir in additional warm chicken broth after pressure release.

Storage and Reheating

Store leftovers covered in the refrigerator. Reheat gently on the stovetop or in the microwave, adding a splash of broth if needed.

Ingredients

  • 1 medium head cabbage, roughly chopped
  • 1 cup water or chicken broth
